Heart-Shaped Raspberry Cheesecake

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted unsalted butter
  • 4 (8 oz) packages cream cheese, softened
  • 1 1/4 cups sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1 cup raspberry preserves

Instructions:

  1. Preheat the oven to 325°F.
  2. In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined.
  3. Press the mixture into the bottom of a 9-inch heart-shaped springform pan.
  4. In a separate bowl, beat the cream cheese until smooth. Gradually add 1 1/4 cups sugar, eggs, vanilla extract, and heavy cream, and continue to beat until well combined.
  5. Pour the mixture into the prepared crust.
  6. Spoon raspberry preserves over the top of the cheesecake mixture, swirling with a knife to create a marbled effect.
  7. Bake for 50 to 55 minutes or until the center is set.
  8. Allow the cheesecake to cool completely before removing it from the pan and serving.
